Manual harvest in the second week of September. Soft pressing of whole bunches. Fermentation and maceration in terracotta amphorae above ground for 21 days with the stems. Aging for 4 months in underground terracotta amphorae and 7 months in steel tanks. Further 4 months of bottle refinement.
