Alvesse 2021

The wine ferments in stainless steel in contact with the skins for 15-20 days. It remains in stainless steel for another three months, then the wine is separated: 50% in used barriques and 50% in terracotta, where it ages for a year. It ages for a further 24 months in bottle before being released for sale.

Intense nose of dark flowers and cherries, with spicy and vegetal notes; austere and deep on the palate, with good structure and persistence.

First courses with game sauces, stewed red meats, mature cheeses.
