BottlesManual harvest between the end of October and the beginning of November, crushing and destemming within two hours of harvesting; maceration and spontaneous fermentation on the skins for at least 10 days, in concrete barrels, without temperature control and with frequent pumping over; soft pressing. The wine matures in concrete barrels and does not undergo any clarification or filtration; refines in bottle for at least 3 months before sale.
Deep ruby red colour; broad and intense nose, of wild violet and morello cherry; austere sip, with marked acidity, and at the same time velvety and harmonious.
Stewed meats, game, mature cheeses.
