The grapes, never pressed, are only destemmed to enhance their characteristics. Spontaneous fermentation for about 15 days, maturation in steel tanks for 6 months before continuing a long refinement in the bottle. Bottling takes place according to the lunar calendar. During the transformation of the wine, no yeasts, bacteria, enzymes or oenological additives are added, apart from very low quantities of sulfur dioxide.
Fresh and dynamic wine, agile and savoury, with soft tannins and long persistence.
Appetizers and first courses of meat, grilled meats, mature cheeses.
