Description

Spontaneous fermentation in concrete tanks in contact with the skins for thirty days. Hand crushing three times a day and frequent pumping over. Matures 12 months in 25hl oak barrels, refines 6 months in bottle.

Tasting

Bright red color with slightly garnet reflections; ripe and spicy nose, of small red fruits; full-bodied, rich and enveloping sip, with great harmony between tannins and acidity.

Stewed red meats, game, roasts, mature cheeses.
