Description

Manual harvesting of the grapes at the end of September; cold maceration on the skins followed by soft pressing; bottling in spring and re-fermentation in the bottle with the addition of the must of Vino Santo Trentino fermenting with its own indigenous yeasts.

Tasting

Pink onion skin colour, fine perlage; lively, intriguing nose, with hints of yeast; fresh, pleasantly soft mouthfeel, with good persistence and a slight bitter note typical of Schiava.
