Castello della Sala is located in Umbria, near the border with Tuscany, about 18 kilometers from the historic city of Orvieto. This imposing medieval manor occupies an area of 600 hectares, of which 200 are under vineyards, and is located between the Paglia river and the top of Monte Nibbio. It has been owned by the Antinori family since 1940.

The History
In the spring of 1979, a young Renzo Cotarella, then twenty-five years old, began his adventure at Castello della Sala. His ambitious goal is to create a white wine capable of maturing over time. We experimented with Chardonnay and Grechetto and after years of effort the 1985 harvest gave life to the first authentic Cervaro della Sala, one of the first Italian wines with malolactic fermentation and aging in barrique.
Terroir & Winery
Castello della Sala is a region particularly suited to the production of white wines, with one notable exception: Pinot Noir. This terroir offers ideal conditions for Pinot Noir, with predominantly clay and limestone soil, enriched by fossil shells. The vineyards, between 220 and 470m above sea level, enjoy excellent exposure at sunrise and wide temperature variations.
