We are in Vittoria, in the heart of one of the most important denominations of the island, that of Cerasuolo, the only DOCG in Sicily. It is here that COS began to follow the principles of biodynamic viticulture from the beginning. It is here that COS, among the first Italian wineries, began to use amphorae. The wines are authentic and Mediterranean interpretations, with a strong artisanal imprint, capable of frankly reflecting the character of the terroir they represent.

The History
The COS agricultural winery was founded in 1980 by three friends: Giambattista Cilia, Cirino Strano and Giusto Occhipinti. The name of the winery comes from the acronym of their surnames (Cilia-Occhipinti-Strano). At the beginning of the business, they were the youngest wine producers in Italy. Starting from an initial production of 1500 bottles in the first harvest, COS played a crucial role in the rebirth of the Vittoria area and its wines, until the decision in 2007 to completely abandon the use of wood in favor of terracotta.
Terroir & Winery
For over three thousand years this land has been home to vines. The territory of Vittoria, a city in the province of Ragusa, is characterized by the gentle slope from the Iblei mountains to the Mediterranean Sea. The moderate altitude, around 200m above sea level, and the proximity to the sea give the area a distinctly Mediterranean climate, on soils rich in limestone, silica, clay and tuff.
