The History
The winery originated way back in 1887 thanks to Eugène-François Chevillon, who inherited some precious parcels of vineyards from his father. In 1946, his sons Georges and Maurice divided the property, and the following year Domaine Georges Chevillon expanded with the acquisition of the 1er Cru “Les St. Georges”. Currently, the winery is managed by Claire Chevillon and her husband Philippe Chezeaux, with vineyards classified Nuits-Saint-Georges AOC.
Terroir & Winery
The 8 hectares of vineyards, all classified under the Nuits-Saint-Georges AOC denomination and divided into 15 different appellations, are carefully looked after. Short pruning and severe destemming are practiced to limit the yield and improve the ripening and quality of the grapes. Defoliation is systematic to promote ventilation and reduce humidity in the vines and prevent diseases. Winemaking is based on respect for each terroir and on the aromatic expression of Pinot Noir.
