Salvatore is the descendant of a family of Aragonese origins, established on the island of Pantelleria in the 14th century. He grows his Zibibbo grapes using Arab methods and makes them according to the tradition of his ancestors.
Two hectares of vineyard on sandy soil, of volcanic origin, at 350 meters above sea level, where the wind blows very strongly constantly; for this reason the vines are grown as saplings, kept low and close to the ground. The grapes grown organically according to ancient methods, once harvested are left to dry for 15/20 days on racks close to the lava stone walls, where sun and wind are abundant; the winemaking takes place in a completely natural way.
