Il Sambuco is a small winery born from the meeting between the winemaker Riccardo del Frate and the Roman restaurateur Paul Pansera; with two and a half hectares of vineyard in the Castelli Romani Regional Park, they create local wines through natural cultivation and processing.

Terroir & Winery

The vineyard is cultivated exclusively with Malvasia di Candia and is made up of 30-year-old vines of average age, grown under certified organic farming. Riccardo, a third generation winemaker, works in an artisanal and minimalist way, avoiding artificial interventions, exploiting the spontaneous fermentation of the musts and maceration on the skins.
