The History
The Ilaria Salvetti agricultural estate began with grandfather Talin, who cultivated Erbaluce here from which he produced a wine intended for family consumption. His son Carlo purchased new vineyards and transformed what had been a family passion into a productive activity; a few years later, with his daughter Ilaria, the business had its official start.
Terroir & Winery
The vines are grown in counter-espalier with Guyot training and pruned according to the Simonit method; since 2016 all production is certified organic. In the winery the fermentations are spontaneous and occur through the action of the yeasts naturally present on the skins.
