A former starred chef in Avignon, Jerome Gradassi is today the smallest producer of the Chateauneuf du Pape appellation, in the south of the Rhône.
Until 2002, one of the most popular chefs in Avignon, complete with a Michelin star, in 2003 he decided to take over his grandfather’s very small winery. Three hectares cultivated almost entirely in Grenache, in the Chateauneuf du Pape denomination.
The choice of processing of the current four hectares has been aimed at total craftsmanship from the beginning: the whole bunches are placed in underground concrete tanks to ferment slowly without the addition of anything. The must is decanted manually by fishing with a bucket and rope. The refinement will then take place in 4/10 year old barriques.
