Piffer is a family-run sparkling wine factory in the municipality of Lavis, near Trento, born from Vito’s over thirty years of experience and the passion that binds him to this area.
The very small winery is the result of the thirty-year experience of Vito Piffer, champion of bubbles. Having graduated as a wine technician in 1984, he began his professional experience in 1985 in the heart of Chianti Classico and then in Emilia-Romagna. The nineties saw Piffer become the oenologist of the cooperative winery in Valle di Cembra, then again in Emilia-Romagna and Marche and finally, since 2005, he has been technical director of the Endrizzi winery of S. Michele all’Adige and consultant at other Tuscan and Romagna companies and Swedes. At the same time, Piffer started the production of limited quantities of Classic Traditional Method Sparkling Wines in the small family sparkling winery.
There are three labels resulting from in-depth geological studies of the porphyritic lands of the Cembra Valley, carried out in collaboration with his brother Gianni, a geologist. The Talento Dosaggio Zero Vulcanite (pure Chardonnay) from volcanic soils, the Talento Brut Diamicton (Chardonnay, Pinot Noir and Pinot Meunier) from the Morainic Hills in the Adige Valley, and the Talento Brut Neno 992 276 Months (Chardonnay and Pinot Noir) , refined in depth in the winery dug into the porphyry rock, where the bottles are immersed in porphyry sand to improve their evolution and conservation.
