Description

Destemming and crushing of the grapes; fermentation with light maceration and malolactic fermentation; the wine is then racked into small 9hl barrels where it rests for about a year. It matures in the bottle for a few months.

Tasting

Ruby red in colour; nose and palate expressive of the fruit and elegance of Nebbiolo, with a balanced touch of ageing oak.

Earthy first courses, roasts, stewed meats, medium-aged cheeses.
