Aleatico
The grapes are left to dry for about 10 days on racks in the open air, with direct exposure to the sun for the first few days and then shaded by a special mobile cover designed and created by the winery. After approximately 10/15 days and careful sorting, the dried grapes are destemmed and subjected to light pressing to break the grapes, then sent to maceration for approximately 8/10 days in stainless steel containers at a controlled temperature; followed by soft pressing. Fermentation continues partly in stainless steel and partly in barriques, where the wine completes its maturation.
Intense ruby red color, tending to amber with aging. Strong nose of ripe fruit, in particular blackberries and black cherries, fig jam and undergrowth; with aging, aromas of undergrowth and spices emerge, while the sweet sensation in the mouth attenuates, leaving room for greater complexity. The sip is soft with a strong note of tannins, the initial sweet sensation gives way to a persistent note of black cherries and red fruit and fig jam.
Alone as a “meditation wine”, dry and soft desserts, chocolate desserts.
