Description

Harvested by hand in the second ten days of September; 70% of the grapes are immediately vinified, while the remaining 30% is dried until December, when it is fermented and then blended with the rest of the grape. The wine then ages in barriques for at least 15 months, before finally refining in the bottle for approximately 7 months.

Tasting

An intense and enveloping nose of ripe red fruit, spices, and fine woods; a juicy palate with fruity notes of plum and cherry, and balsamic notes of licorice and chocolate; a finish balanced between sweetness and freshness, with great harmony.

Pairings

Meat-based first courses, roasts, stewed meats, casseroles, medium-aged cheeses.
