Description

The harvested grapes dry naturally in the fruit winery for about 120 days before spontaneously fermenting in open oak vats. Maturation for 3/4 years in 25 hl oak barrels and refinement in the bottle for at least 3 years.

Tasting

Intense ruby red color; enveloping nose of ripe plum, undergrowth and dried fruit; dense and complex sip, monumental.

Pairings

Braised meats, game, mature cheeses, even on its own.
