Description

Manual harvest between the end of September and the beginning of October; soft pressing, static decantation of the free-run must, fermentation in concrete tanks with Native yeasts at 16/18°C. The wine matures for approximately 20 months in vitrified concrete tanks; refines in bottle for another 10 months.

Tasting

Straw yellow color with greenish reflections tending towards gold; complex and elegant nose, with delicate notes of ripe yellow fruit, citrus, anise and aromatic herbs; dry, fresh and savory sip, characterized by great elegance and a good structure, and supported by an important minerality; long persistence in the mouth with almondy aftertaste.

Seafood appetizers, smoked fish, crustaceans and molluscs, roasted or grilled white meats.
