Manual harvesting of the grapes, soft whole bunch pressing; the must without the skins ferments spontaneously in a concrete tank and before the fermentation ends, after coarse bag filtration, it is bottled so that the yeasts complete their work in the bottle giving rise to the second fermentation (ancestral method). Sulfur dioxide is not added at any time.
Bright pink color with fine perlage; mineral nose, of small red fruits, violets and wild herbs; fresh and juicy sip, dynamic and thirst-quenching.
