Cabernet Franc
Manual harvest, spontaneous fermentation with indigenous yeasts in steel with maceration on the skins for a few days; maturation in barriques from the second to the fifth passage for one year; assembly and bottle aging. No addition of sulphites.
Intense nose, of dark dried flowers, berries and wild herbs, with balsamic and spicy notes; fresh, savory and mineral on the palate, with dense, silky tannins and long persistence.
First courses with game sauces, stewed red meats, game, mature cheeses.
