The grapes, never pressed, are only destemmed to enhance their characteristics. Spontaneous fermentation for about 15 days, maturation in spherical cement tanks for a year before continuing a long refinement in the bottle. Bottling takes place according to the lunar calendar. During the transformation of the wine, no yeasts, bacteria, enzymes or oenological additives are added, apart from very low quantities of sulfur dioxide.
Deep ruby red color, with purple reflections; mineral and iodized nose, with notes of wild berries; savory and very fresh sip, intense and persistent.
Land appetizers, first courses with meat sauces, grilled white meats, mature cheeses.
