Description

Manual harvest in the first ten days of October; direct pressing of whole bunches with natural static decantation of the must for 30 hours; fermentation with pied de cuve of Native yeasts for 15/20 days, maturation in steel for approximately 6 months with three rackings carried out. Bottle refinement. Racking and bottling according to the phases of the moon.

Golden straw yellow colour; nose of citrus fruits and aromatic herbs, fresh, mineral and savory sip.
