The freshly harvested grapes are pressed, destemmed and placed in temperature-controlled steel tanks. Once fermentation has started, we proceed with daily pumping over to favor the extraction of colors and aromas. After 8 – 10 days the fermentation ends and we move on to submerged cap maceration. During maceration, which lasts on average 25 – 30 days, malolactic fermentation also takes place which contributes to making the wine stable from a microOrganic point of view. In December the aging in wood begins and lasts for approximately 30 months. This is followed by bottling and further refinement in the bottle for another 8 – 10 months, at the end of which the product will be ready for sale.
Bright and brilliant ruby red colour, intense with light orange reflections. Clean, broad bouquet, with delicate notes of violet, spices, hay and liquorice. Harmonious, full and slightly dry taste with a very persistent and complex finish, which leaves a pleasant hint of liquorice.
First courses with meat sauces, stuffed egg pasta, braised meats and stews including game, medium-long aged hard cheeses, truffles.
