Description

Manual selection of grapes, harvest time: October. Fermentation and maceration for approximately 35 days, pumping over and délestage, last 15 days with submerged cap. Aging in 25, 35, 40 or 50 hectoliter Austrian oak barrels for 18 to 30 months. Further refinement in the bottle before marketing.

Tasting

Brilliant garnet red colour. On the nose strawberry and cherry, rose and violet, licorice and balsamic notes. Powerful sip, with delicate and elegant tannins.

Pairings

Guinea fowl with sweet spices, Fassona shank with Barolo Chinato, stuffed veal pocket.
