From one hectare of vineyard, manual selection of the grapes, harvest period: October. Fermentation and maceration for approximately 40 days, pumping over and délestage, with the last 20 days under submerged cap. Aging in 25, 35, 40 or 50 hl Austrian oak barrels for 18 to 30 months. Further refinement in the bottle before marketing.
Intense garnet red colour. It has hints of aromatic herbs, flowers and dark pulp fruit, mint and pepper. Compact and sinuous structure, with a dense and velvety tannic texture and a savory and balsamic finish.
Mixed boiled meat, hare casserole, Castelmagno blue mountain pasture.
