Description

Manual harvesting towards the end of October; vinification half in steel and half in wood, with long maceration on the skins for 30/35 days. It then matures for 24 months in large 50hl Slavonian oak casks and 6 months in cement vats; it is refined for 18 months in the bottle.

Tasting

Garnet red colour; intense and elegant nose of spices and incense, with fruity notes; fresh and balanced, but with an important structure; long, fine finish of medicinal herbs.

Roasts, braised meats, game, mature cheeses.
