“Beyond the Clouds” ARGENTUM BONUM – SILBERSTOLLEN Grand Cuvéè Alto Adige DOC 2015

The blend is predominantly Chardonnay, which is harvested from two single vineyards at different periods depending on the degree of ripeness, and where the other varieties that make up the blend are also found. After fermentation, a “batonnage” is carried out weekly for 3 months. The wine matures in French barriques for approximately 10 months, followed by bottle aging for five years in a disused mine in Val Ridanna at 2000m, in total darkness and complete isolation. The absolute lack of light, the constant quarry temperature of 7°C and a humidity of 95% together with the extremely low air pressure positively influence the maturation process of this wine, giving it youth.

All the peculiarities of the “Beyond the Clouds” cuvée are found, but made more refined and complex by the long aging in the mine. Bright deep yellow colour; nose of notable complexity, from pineapple to rose petals, to toasted notes. In the mouth the complexity unfolds between creaminess and flavor, between softness and freshness. Long finish accompanied by light barricade notes.
