Sparkling wine made from local white grapes from vines at least 60 years old. The wine is obtained from a base vintage, vinified and aged partly in empty barrels and partly in steel, to which 30% of perpetual wines have been added since 2014. The secondary fermentation takes place in the bottle, and it is then disgorged after at least 36 months on its lees. Unfiltered and unstabilized.
Antique gold in color, with a fine, persistent perlage; a nose of hazelnuts and citrus, with intriguing oxidative notes and hints of bread; a rich, elegant sip, crisp and persistent.
Shellfish, raw seafood, cured meats and cheeses.
