BottlesVinification: direct whole bunch pressing, cold fermentation with Native yeasts. Aging: in oak barrels, of which 30% are new, for approximately 17 months, 1 month in steel before bottling; unfiltered and unclarified.
On the nose it expresses itself with citrus and candied lemon notes, which combine with those of toasted bread and brioche; the white flowers complete the bouquet. The sip is juicy, fresh and saline, with beautiful minerality, with aromas of almond and hazelnut.
Seafood, fatty fish, traditional French creamy cheeses, cured meats.
