Pinot Noir
Vinification: 3/5 days of cold maceration, rest for 15 days. The yeasts that act are always only those naturally present on the skins. Aging: 17 months in oak barrels, of which 20% new, 1 month in steel before bottling; unfiltered and unclarified.
On the nose, a riot of red fruits and blackberries, with a nice component of refreshing aromatic herbs. The sip is juicy and highlights the small fruits, supported by the spicy and mineral part. The whole thing, nose and palate together, is played on extreme elegance and finesse, with a hint of wood and perfectly integrated, as well as the alcoholic part.
Very versatile wine. Excellent with red and white meats, large game (chamois, deer), risotto with wild mushrooms, mature cheeses. Also suitable for oriental cuisine. Also perfect on its own, to accompany a chat.
