From a two-hectare vineyard at 300m above sea level, on soil of volcanic origin, mainly sandy with the presence of silt and clay. Fermentation and maceration in cement with daily pumping over and punching down for 18 days. Malolactic fermentation in wood occurs naturally immediately after racking or during the following spring. Aging in large oak barrels for approximately 36 months. Aged for 12 months in the bottle before distribution.
Garnet red colour. Broad nose where spicy notes of juniper, anise and cloves stand out, as well as hints of red fruit and medicinal herbs. On the palate, the wine is well structured and has a good alcohol content, thus balancing the tannic and acid components. Savory and persistent wine, with a slightly bitter finish.
Poultry, game, game, red meats, roasts, braised meats, mature cheeses.
