Description

The grapes are vinified in steel, where the wine is also matured. The following spring the wine is bottled where the second fermentation takes place. Minimum 24 months on the lees, traditional hand riddling on the pupitres, dégorgement and refinement period before being put on sale. Total acidity 6.3 g/L. Sugar value 4.5 g/L.

Tasting

Straw yellow colour, with very fine and continuous perlage; the nose is intense and elegant, with hints of exotic fruit and floral notes. Harmonious, fine and lively sip.

Pairings

Starters, raw salmon, fish salad, fried vegetables and baby octopus.
