Manual harvest with rigorous selection of the grapes in the vineyard between the last ten days of August and the first ten days of September. Vinification: from the vineyard the boxes of Chardonnay are placed in a cold room for one night, the whole bunches are then pressed with a yield of 60%. the free-run must rests for 24 hours at low temperature, favoring natural clarification and a lysis of the varietal aromas. Fermentation is carried out slowly at 16°C to retain all the aromas. The maturation of the base wine on the yeasts lasts approximately 7 months in stainless steel tanks and the draft for the secondary fermentation is done in the month of May. Bottle aging on yeasts for 30 months.
Brilliant straw yellow color with golden reflections, dense, fine and persistent perlage. Nose of light honeys and ripe yellow peach, with nuances of butter, almond and bread crust. Savory, fresh and mineral, soft and persistent on the palate.
Delicate appetizers, light first courses, medium-aged goat’s cheeses.
