Manual harvest in small boxes with selection of the grapes in the vineyard between the last ten days of August and the first ten days of September. Vinification: the soft pressing of the whole bunches involves the use of 60% of the free-run must, the cold decantation lasts from 24 to 36 hours at a temperature of 10°C. Fermentation takes place around approximately 16°C. Maturation on the fine lees for approximately 6 months, carried out in stainless steel tanks; a part of the base wines undergoes malolactic fermentation depending on the vintage. Bottle aging on yeasts for 48 months.
