BottlesSoft pressing, preventive static decantation of the musts, fermentation in steel. Before tirage, it refines in steel for 7 months with contact with the fine lees, followed by 96 months on the yeasts in bottles at a constant natural 12°C, in the ancient caves dug into the tuff.
Pale gold color with very fine and persistent perlage. Intense nose of freshly baked bread crust, with mineral sensations; dry, savory and fresh sip.
