Manual harvest in boxes with selection in the vineyard; very slow and soft pressing of the whole bunches, with short submerged cap maceration; spontaneous fermentation in stainless steel tanks at a controlled temperature of 17/19°C; in March/April passage into the bottle for second fermentation according to the Classic Method.

Onion skin pink colour, very fine and persistent perlage; nose of flowers (wild rose) and small red berries (raspberry); fine and complex sip, dry, dry and polite.
