The harvest takes place manually with the grapes being transported in small crates, until the end of August. The Rosé comes from Pinot Noir grapes vinified in steel tanks with submerged cap maceration for a period of very few hours which varies according to the vintage; This results in a delicate and elegant pink colour. The must is then separated from the pomace to complete the fermentation at a controlled temperature. The draft is carried out in the months of April and May. The second fermentation in the bottle varies from 24 to 36 months depending on the vintage; when the maturation of the Rosé has reached the desired characteristics, it is disgorged with the addition of the appropriate “Liqueur d’expedition”. This product is presented in the “brut” version and dosed at between 6-7 g/l of residual sugar. After a stop of about three months in the cellar for refinement, the bottles are ready.
