The soil is composed of loose and aerated soil, rich in limestone, thanks to the flooding of the Meduna stream. The cultivation is Guyot, with rigorous winter pruning and the vines are protected from parasites through natural methods of integrated pest control. The harvest is carried out strictly by hand, generally in the second half of September. Once the sparkling wine base has been obtained, in December we proceed with the tirage, when, following the addition of yeast and sugars, the wine ferments in the bottle, creating a very fine bubble. The bottles rest for at least 10 months, with regular manual riddling until disgorgement.
