Description

From the vineyard of the same name at an altitude of 380 meters above sea level, with an average age of vines of 20 years, on mixed sandy-clayey soils. The selection is very strict, one or two bunches per plant. Fermentation with the use of indigenous yeasts only and maceration for about 20 days. Once the malolactic fermentation is complete, the wine ages for 36 months in stainless steel and 3 months in cement. Very enjoyable right away, it offers surprises if left time.

Tasting

Straw yellow color with golden reflections; ripe fruit, almond, chamomile and hay on the nose, with hints of honey and saffron; the sip is savoury, well-structured, expressive and persistent, with a central mineral and spicy vein. Great complexity and aging potential.

Pairings

Rich and elaborate fish dishes, especially first courses; try with bottarga.
