Cooling in the cell overnight at 1°C/3°C, destemming the following day. Spontaneous fermentation in red for approximately 18 days without temperature control; stainless steel battonage for 6 months. Single addition of sulfur dioxide in pre-fermentation, 20mg/L total.
On the nose it presents light sensations of fresh grapes, apricot and broom in bloom, with notes of candied lemon; structured sip, but fresh and generous, with a long dynamic persistence.
Roasted or grilled white meats, grilled prawns, fish soup.
