In the southernmost part of the island, which has always been considered the most suitable for growing vines, the “Capel Rosso” vineyard was planted around 1930, climbing steep slopes. A selection of its best bunches gives life to this wine. The destemming of the grapes is followed by a 72-hour cold maceration, delicate pressing and static decantation of the must. Spontaneous fermentation at a controlled temperature, remaining on the fine lees for at least 6 months and in the bottle for another 6 months.
Deep straw yellow colour; strong and complex nose, intense of yellow fruit with aromas of minerals and iodine, notes of honey and chamomile. Powerful and balanced sip, very rich and with great structure. The age of the vines is decisive for the freshness and persistence of this wine.
Raw seafood, steamed or grilled fish and shellfish, caviar.
