Charging
The vineyard is located in the northern part of the volcano, in the Calderara district, at an altitude of 650 meters above sea level. The soil is volcanic, rich in minerals and skeleton. The grapes are harvested manually at the end of September, pressed and destemmed, and placed in steel in contact with the skins for 2/3 days, starting fermentation spontaneously. Pressed with a manual press, the fermentation ends at a temperature between 20 and 24°C and carries out malolactic fermentation. It matures on the noble lees for three months, with alternating batonnage. The wine obtained, not clarified or filtered, is bottled.
The wine is straw yellow with herbaceous reflections. In the mouth it is fresh, round, tasty with good persistence. On the nose there are hints of fruit, green apple, light sulphurous hints.
It should be paired with fish-based dishes, white meats and cheeses.
