Description

The grapes are harvested in mid-September/early October and left to dry in small crates in special drying rooms. In December, the grapes are cold-macerated for eight days, then slowly fermented. The wine ages for a year in oak barrels and then refines in the bottle for eight months.

Tasting

Deep ruby red color with purple highlights; intense nose of ripe fruit, cherry, and wild berry jam; warm, full-bodied, and elegant on the palate, with a long finish.

Pairings

Stewed meats, casseroles and braised dishes, mature cheeses.
