Pinot Meunier 100%
Grapes harvested by hand from two ancient plots of Pinot Meunier, one dated 1960, the other 1925; after 20 hours of maceration it is vinified in steel for 80% and in oak barrels for the remaining 20%; the base wine bottled for refermentation rests on the yeasts for at least 24 months; no dosage at disgorgement.
Rich and enveloping nose, of red fruits and grapefruit, aromatic herbs and flowers; fresh and mineral sip, slightly spicy, with a long and harmonious finish.
Baked fish, crustaceans and molluscs, medium-aged cheeses.
