Description

Manual harvest, debourbage at 12°C, spontaneous alcoholic and malolactic fermentation in stainless steel, then 30 months in bottle on the lees. Dosage of 3-4 g/l and disgorgement 6 months before release.

Tasting

Fragrant nose of wild strawberries, cherries, and pink grapefruit, with notes of toasted bread; creamy and fresh on the palate, balanced and persistent.

Tuna tartare, smoked salmon, seafood appetizers, steamed shellfish, soft cheeses.
