Description

The harvest takes place between August and September and the must is left in contact with the skins at low temperature for approximately 12 hours. This is followed by soft pressing and fermentation, which is carried out in Allier barriques and steel tanks. Refines in the bottle for about six months.

Tasting

Pale straw yellow color with jade reflections. Bouquet ranging from ripe fruit to floral, with notes of apricot, yellow plum, peach, melon, but also pink grapefruit, lemon and cedar, candied ginger, orange honey, quince jam, jasmine and orange blossom. In the mouth it is soft and enveloping, with a fresh acidity that evokes notes of grapefruit, candied citron, orange, medlar. The balsamic and savory finish calls for a new taste.

Pairings

Perfect with fish crudités, marinated fish, shellfish, prawn or vegetable tempura.
