80% Grenache, 20% Mourvèdre
Slow fermentation in underground concrete tanks; manual decanting of the must by fishing with a bucket and rope, aging for 12 months in old 4/10 year old barriques.
Opaque ruby color as in the best tradition of the appellation; Ripe black and blue fruits stand out on the nose, but are accompanied by fresh violets, dried herbs, liquorice and wood smoke. Subtle floral and spicy nuances enliven the broad cassis and black cherry flavors that coat the palate. Rich but lively wine, with a strong final impact, soft tannins and persistent smokiness.
