Description

Late harvest carried out by hand at night at the beginning of winter, at very cold temperatures that allow the grapes to be harvested at freezing temperatures; pressing takes place at first light; maturation for 12 months in barrels of different sizes and woods.

Tasting

Golden yellow in colour, an intense, complex, spicy bouquet tending towards dried fruit, figs, dates and honey, with balsamic notes of sage and thyme; the sip is persistent and reminiscent of candied fruit, with a good final freshness.

Pairings

Blue cheeses, dry pastries, nougat.
