The grapes are selected for the first time by the harvesters in the vineyard, then upon their arrival in the winery they go through a double sorting, of the bunches and then of the berries. Vinification in non-vitrified concrete tanks, filled by gravity, gently acwinerying the grapes into the tank, without using mechanical pumps so as not to corrupt the integrity of the grape. Once fermentation has been established, pumping over and pressing are carried out during the entire period of stay in the tank which can reach up to 25 days; the racking and pressing of the pomace take place using a vertical press. This is followed by maturation of 6/8 months in a concrete tank and large 45hl Slavonian oak barrel. Bottle aging for 18 months.
